For someone who didn't even like chili peppers as a kid, Luis Montalvo has come a long way.
Born in El Salvador and a resident of Canada for the past 23 years, Luis spent a year in Mexico in his twenties that changed his life. There he learned to appreciate the nuances of Latin cooking, and began to dream of opening a restaurant that served all of his favorite dishes. Luis went on to obtain his chef's papers from Alberta's NAIT college and today, he is thrilled to have done just that.
